The Wrays (my father’s last name), we were on the outside looking in, we had to learn the Cajun way. Thankfully my grandmother on (my mother’s side) Eva Acosta was an amazing teacher. Her family dates to some of the first settlers in Louisiana via the Canary Islands. Eventually settling in Plaquemine, LA and working the land as farmers. The Acosta family over time adopted the Cajun lifestyle due to the proximity to Pierre Part and Bayou Pigeon well known Cajun French speaking communities and the Friendships forged on the land they worked together. My Grandmother learned to cook from many generations of women in her family and french Cajuns in there community.

Guidry’s family grew up in Reserve, La between the Bayous of Houma and Swamps New Orleans. The Guidry’s are proud of their French Cajun Heritage and like many other Cajun family’s food played a large part in their gatherings, as well as day to day life. The Guidry family worked and lived off what was known as the Godchaux Plantation in South Louisiana. One of the biggest goals in the Guidry household was to prepare a dish for family and friends, if you pass that test you were on your way to being a recognized as a Cajun. Cajun tradition is not just the passing down of recipes from generation to generation, it’s also the telling of the stories of struggle and triumph from past generations. It is said that the stories are the soul of Cajun food. Making food, telling stories and enjoying each other’s company somehow makes the food even better. The Guidry name is one of the oldest and popular Cajun names in Louisiana. It is jokingly said “You can’t throw a rock and not hit a Guidry in Louisiana”.
